Growing Up

Each time I completed another paragraph from THIS post the other night
I was amazed and would say to myself:

"This women is speaking my words, articulating my exact same thoughts."

By the time I finished reading the post my blood began to boil,
as it does when I consider ponder this issue.

Then I spent a sleepless night in utter frustration.

My thoughts were focused on the exhausting efforts that concerned
parents are obligated to make
in order to protect their children, in my case girls,
from the smut and filth which has permeated our culture.

Remember the saying our grandparents, perhaps even parents
and every other generation prior to them would use:

"It takes a village"

Now responsible parents are doing all they can to to protect
their children from that "village."

I am grateful for the courageous mother warrior over at
Clover Lane.

It's refreshing to hear someone speak the truth boldly.
I have certainly inspired by her to do so!

THIS is another fantastic article all parents should read.

With that being said our baby girl is growing up quickly enough all on her own.

On Thursday she began phase one braces.

The first part of her 16 month treatment includes an upper palatal expander and
two brace brackets.
Six months from now we will move on to treating the issues in her bottom jaw.

We love her orthodontist.
I actually happened to find him on my flight home from Puerto Rico!
We talked the entire time. Poor guy had to stare at my lovely cold sore face
for 2 hours of conversation.

Cody took off work to be with me right by her side during her first orthodontist experience.

She was so brave!

I sat holding her sweaty little hand throughout the ordeal.
Never once did she shed a tear. Well, not until later in the day.

She is on a strictly soft foods diet for a week until she masters chewing her food without the use of EIGHT back teeth which are completely
covered by a hard plastic contraption which holds the expander in place.

We crank both screws every night for 35 days and then comes appointment #2.

This is all quite familiar to me as I was supporting Cody throughout the exact same
orthodontic treatment when Brinley was a newborn baby,
however his treatment included an invasive surgery and then more minor surgeries
which Brinley will not have.

An ice cream outing was certainly in order for our sweet girl after the appointment.

Poor thing is having to learn how to speak properly again.
She had to postpone the talk
she was going to be giving in church this week until she is able to speak clearly.

I have been completely impressed by Brinley's positive attitude so far.
Although it has been painful at times and eating has been a struggle she has been
  upbeat for the most part.

Beets

Here is what I think about when I cook beets

Tovi is a dear friend I met in Missouri during medical school.
One evening she came to my house while I was cooking beets and starting cracking up.

She said something along the lines of

"I honestly thought that only old people cooked and ate beets."

Then I cracked up too!

Beets are delightful alone with a little butter or in salad like this one
I ate yesterday for lunch.

To cook:
Cut off the top stems and boil for a good 30-40 minutes
(remember to keep adding water to the pot).
After cooking the skin will slip right off.
Then just cut and enjoy!

Beets are wonderful for your body and John Rosemond is wonderful for your parentning.

Luck of the Irish

Happy St. Patrick's Day!

Here is a little clip of Brinley practicing one of her Irish dance jigs.
She and Avery started Irish dance lessons two months ago
and they are just loving it!

Here is Avery too, but she was being a little goofy with her pants rolled all the way up!

This morning I had a sea of green in my classes at the gym, loved that!

Now I am off to volunteer at Brinley's school.
She is going to do a jig for her classmates today.

Oh, and this morning over our green breakfast Brinley explained to me
how St. Patricks day came to be...that was after I had suggested we google the history of it.

Saying Goodbye

This summer several of my dear friends will be finishing residency and moving away.
I do not like this one little bit!

During a playgroup outing this morning I had to silence Angie
again for talking about her upcoming moving date.
Those are four letter like conversations which I am trying to avoid like the plague.

Sarah, who moved away last year, recently flew in for a visit and we enjoyed several fun female gatherings during her quick trip.
See how she discovered she was coming on this trip HERE.

Good conversation and laughter is always abundant during our cherished outings.

Deep down I fear I may never find a greater group of women whom I so
admire, adore and love spending time with.

Surprise

Aunt Kelty and her bathing beauty Rella boarded a plane and headed our way last weekend.
We kept her visit a secret from the girls and so when we picked them up at friends
houses after school they experienced delightful shock!

Visit Highlights:

Kelty's creative "Time Capsule" creation activity.
Kite flying...until the younger girls both fell in the mud after the first 10 minutes of being at the park.
Indoor play gym outing.
Bath time with Rella.
Rella, Rella, Rella!
Puppy playtime at Pet Land...

and what would a Kelty visit be without a magical dress up play presentation (see above)!

Thank you Duane for letting us borrow your lovely ladies for a few
days during your convention.

Thank you Kelty for enduring our girls overbearing desire to have your undivided
attention every second you are here.

And thank you Rella for being patient and pleasant amidst the constant clamor and chaos of our lives, which is very much the opposite of what you are accustomed to.

We love you!

I Do Too!

"I guess I just love food too much," is what I often hear frustrated gym members saying.
Here is how I respond to that "I do too."

(My lunch)

Loving food is just a part of our wonderful journey here on earth.
The great news is that we can all love food AND be healthy too!

Our nation is collectively becoming more aware, more informed
and more conscientious about our food choices,
thanks to people like Mr. Pollan and others.

As I learn more about healthy eating I am encouraged to make better choices for
myself and my family.
When we know better we must do better!

THIS is a delicious roasted cauliflower soup I made last night for dinner.
I served pita pockets (pictured above), carrots and frozen blueberries to  accompany the soup.

Bye bye to microwave popcorn, now we pop it fresh.
Organic ketchup, peanut butter and jam are also totally tasty and have ZERO
high fructose corn syrup in them.

We recently added a new family member into our lives that helps us live healthier,
her name is Blendtec!

We've made smoothies, ice cream, dressings, soup (like the one above)
you name it, the Blendtec can make it!

I've become a fan of THIS site since the new family member arrived.

This week I made the Cafe Rio Pork salad.
Cafe Rio die hards know that the key to their divine creations is their delicious
salad dressing (as seen above).

Cafe Rio Creamy Dressing:

3 to 4 tomatillos
Juice from one lime
1/2 C. buttermilk
1/2 C. mayo
1/2 C. sour cream
1 packet ranch dressing mix
1 C. fresh packed cilantro
5 stalks green onion
3 cloves garlic
1/2 t. salt
1/4 t. cayenne pepper
4t. sugar

Blend together well and refrigerate for 1 hour prior to serving.

Pork:
3 to 4 lbs. pork roast
1 c. pace picante salsa
1 c. packed brown sugar

Combine sugar and salsa and pour over roast in crock pot.
Cook on low all day long. Remove roast, eliminate all fat, shred and place back into
crock pot with drippings before serving.

Salad:

Romaine lettuce
Black beans
Rice
Avacado
Tomatoes
Fresh lime wedges
Torltialls with melted sharp cheddar
(you serve the salad atop the torltillas)

One of my three "kitchen helpers."

Brinley began taking morning oatmeal preparation lessons this week.
Soon enough she will be our master oatmeal chef!

Yesterday's lunch.
Avery and Aspen are edamame fanatics.
It's hilarious watching them pop the beans into their mouths...and onto the floor.
